பாலக்காட்டுப் பக்கத்திலே ஒரு பண்டம்

சமீபத்தில் பாலக்காட்டில் ஒரு குடும்ப வைபவத்திற்கு போயிருந்தோம். காலை உணவுக்கு எங்களை அழைத்திருந்த வீட்டில் ராமசெரி இட்லி என்ற பெயர் பலமுறை சொல்லப்பட்டது. "வாருங்கள் ராமசெரி இட்லி வந்தாச்சு' என்றார் ஒருவர். சற்று நேரத்தில் இன்னொருவர் 'ராமசெரி இட்லி ஆறிப் போய் விடப்போகிறது. சாப்பிட வாருங்கள்' என்றார். பரமாறியவர் 'ம்ம், ராமசெரி இட்லி எப்படி, நன்றாக இருக்கிறதா?' என்றார். அப்படி அதில் என்னதான் விசேஷம் என்று பார்த்தால் ஆவியில் வைத்த தோசை போன்ற ஒரு பதார்த்தம். மிருதுவாக இருந்தது. ருசி நம் இட்லி போலத்தான். இலையில் வைத்த இரண்டை சாப்பிட்டு முடித்ததும் இன்னொருவர் வந்து "இன்னும் ரெண்டு போட்டுக் கொள்ளுங்கள். இது இங்கே விட்டால் வேறு எங்கும் கிடைக்காது.' என்றார். கழுதைக்குத் தெரியுமா கற்பூர வாசனை என்பார்களே அந்த கதை போல எனக்கு இந்த பதார்த்தத்தில் அப்படி என்ன விசேஷம் என்றே புரியவில்லை. ராமசெரி இட்லி இல்லை என்றால் என்ன எங்கள் ஊரில் எங்கும் இட்லி கிடைக்குமே. ஒரே பதார்த்தம்தானே, வடிவம்தான் வேறு மாதிரி இருக்கிறது என்று நினைத்துக் கொண்டேன்.

ஏறக்குறைய ஒரே மாதிரி ருசி உள்ள பதார்தங்களுக்காக மிகவும் மெனக்கிடுவது எனக்குப் புரியாத விஷயம். இப்படித்தான் சேவை என்னும் சிற்றுணவை செய்வதற்கு எங்கள் வீட்டுப் பெரியவர்கள் மிகவும் சிரமம் எடுத்துக் கொள்வார்கள். இதை இடியாப்பம் என்றும் சொல்வார்கள். இப்போதெல்லாம் அது instant வடிவத்தில் கிடைக்கிறது. பாக்கெட்டை பிரித்து வெந்நீரில் கொதிக்க வைத்தால் தயார். ஒரு முப்பது நாற்பது வருடங்களுக்கு முன் இது ஒரு industrial process போல அவ்வளவு சிரமமான சமாசாரம். அரிசியை ஊறவைத்து, இடித்து மாவு கிளறி அப்புறம் இதற்காகவே உபயோகப்படும் ஒரு இயந்திரத்தில் இந்த மாவை அடைத்து அதை மிகவும் சிரமப்பட்டுப் பிழிந்து பின்னர் இதற்கு வித விதமான தாளிதம் செய்து தயாரிப்பார்கள். இதில் ஏதாவது ஒரு கட்டத்தில் இசகு பிசகானாலும் பண்டத்தின் ருசி குறைந்து போகும். இறுதியில் பார்த்தால்
ருசி என்னமோ ஏறக்குறைய எலுமிச்சம்பழ சாதம், தேங்காய் சாதம் போலத்தான்
இருக்கும்.(சேவைப் பிரியர்கள் அடிக்க வராதீர்கள். 'ஏறக்குறைய' என்றுதான் முதலிலேயே சொன்னேனே .)
இப்படித்தான் ஒரு மாமி வீட்டில் ஒருமுறை மிகவும் கஷ்டப்பட்டு சேவை தயாரித்துக் கொடுத்தாள். நானோ நன்றாக சாப்பிட்டு விட்டு 'ஏன் மாமி இந்தக்
கஷ்டம் , வெறும் தேங்காய் சாதம் , எலுமிச்சம்பழ சாதமே கொடுத்திருந்தாலும் போதுமே ' என்று சொல்லிவிட்டேன் . மாமிக்கு வந்ததே கோபம். உனக்காக பட்டு நூல் போல சேவை பண்ணி இருக்கிறேன் இப்படி சொல்லி விட்டாயே என்று நொந்து போனாள்.

பிடி கொழுக்கட்டை என்றொரு சிற்றுண்டி. அரிசி உப்புமாவை அருமையாகத் தயாரித்துபின் அதை உருட்டி இட்லி போல வேக வைத்துக் கொடுப்பார்கள். ஏன் அதை உப்புமாவாகவே சாப்பிடலாமே. எதற்கு இன்னொரு கூடுதல் கட்டம்?
உடம்பு சுகம் இல்லாதவர்கள், வயதானவர் அல்லது குழந்தைகள் போன்ற ஜீரண சக்தி குறைதவர்களுக்கு இந்த இரட்டை வேக்காடுதேவைப்படும். மற்றபடி நாக்கு ருசிக்காகவே சாபிடுவோருக்கு இந்த கூடுதல் வேக்காட்டின் மூலம் ஒரு வித்யாசமும் இருப்பதாக எனக்குத் தெரியவில்லை. உருவம் மட்டும்தான் வேறுபடும். இல்லை ஒருவேளை ருசியும் நுணுக்கமாக வேறுபடுமோ எனக்குத்தான் அவ்வளவு தெரியவில்லையோ. அதுவும் தெரியாது. ஆனால் இத்தனை நுணுக்கமான சுவை வித்யாசத்துக்காக நான் மெனக்கிட மாட்டேன்.

ஆனாலும் இந்த ராமசெரி இட்லியில் அப்படி என்னதான் இருக்கிறது என்று வலை வீசிப் பார்த்ததில் கிடைத்தது இங்கே:

Ramasseri idli

Ramasseri, an offbeat village in Palakkad is known all over Kerala for the idlis it makes—the delicious Ramasseri Idli. Spongy and soft Ramasseri Idli is slightly different in shape from the conventional idlis. It is a little flat and round. Ramasseri Idli is eaten with Podi mixed in coconut oil. The beginning was from a Mudaliar family living near Mannath Bhagavathi Temple in Ramasseri near Elappully.[citation needed]

The recipe of Ramasseri idli dates back to about one century, which again is a trade secret. The Muthaliyar family had migrated to Palakkad from Kanchipuram in Tamil Nadu. The new generation in the profession says that the secret of the recipe and taste were handed down to them from the older women of the community. Now the idli business is confined to four families in Ramasseri. Selection of rice is very important in making Ramasseri idli. Usually the varieties used are Kazhama, Thavalakannan, Ponni etc.

The taste depends on the boiling of paddy itself. Drying and dehusking are also important and need to be done in a particular way. The combination of rice and black gram is also equally important. For 10 kg of rice, one kg of black gram is used. Idli is made only after four hours of fermentation. Steaming of the idli is done on a cloth covered on the mud pot using firewood. This allegedly provides a special taste to the preparation. Leftover Idli can be torn into crumbs and used for preparing dishes such as Idli fry and Idli Upma.

இப்போது புரிகிறது ஏன் அதனை முறை அந்தப பண்டத்தின் பெயரைத் திரும்ப திரும்ப சொன்னார்கள் என்று. அந்த சின்ன வட்டத்துக்குள் அவ்வளவு விஷயம் இருக்குது. இதை முதலிலேயே படித்து விட்டுப் போயிருந்தால் நானும் இதைப் பற்றி கொஞ்சம் சிலாஹித்துப் பேசி இருக்கலாம். அவர்களும் இவ்வளவு சிரமப்பட்டது வீண் போகவில்லை என்று சந்தோஷப் பட்டிருப்பார்கள். நீங்கள் அடுத்த முறை பாலக்காட்டுபக்கம் போனால் இதை கட்டாயம் ருசித்துப் பாருங்கள்.
ஸ்ஸ்ஸ்..அப்புறம் வந்து அதில் அப்படி என்ன ருசி இருக்கிறது என்று என்னிடம்சொல்லுங்கள். நானும் தெரிந்து கொள்கிறேன் அந்த கற்பூர வாசத்தைபற்றி.

    Its my belief that foodstuffs unique to places are similar to a language itself, it is treasured and it is percievable only if we are open minded( open tongued !!!!) and ready to experience it.

    The list is endless, take for instance, tirupati laddu,kanchipuram idly, kalahasthi milagu vadai,sussendaram vadai,srirangam akkara adisil, krishna sweets badham halwa, MTR kara baath, adayar anandha bhavans rava idly, gupta bhavans paruppu poli..... oops i cant stop and i will get gastritis thinking about all!!!!

    At some instances i too felt about the hard work it takes to make certain pakhsanam like adhirasham... it sucks lots of hard work ( more than the oil) and the results are sub optimum... at the other end, dishes like carrot halwa and payasam are easy to make and tastier too...but i have seen people dying for adhirasam and i respect their sentiments and likings.

    To add to it, idiyappam is my favorite dish and i can spend hours together in preparing it and an another hour to make its side dish.. coconut milk.!!!

    So to sum it up, just like one persons taste for good literature and philosophies, taste for food is also important ( atleast for me...)... come-on, after all we struggle for good quality of life( which includes good food).

    Karuna I totally agree that saappattai rasikkaradhu is also a fine art. adhaan connosseurs nu oru padhame irukke.
    adhennamo theriyalai nanum 50 varushama saptindirukken. 30 varushama samaichindirukken. anaa indha nunukkamaana differences ellam enakku puriyave matengaradhu.
    sari adutha murai chennai porappo kancheepuram poi andha idliyaiyum saptu pathudaren. Varadharaja perumal aasirvadhathulayavadhu enakku indha delicate distinctions ellam puriyaradha paakaren.

    Anon2: This is thinner than thatte idli. and for thatte idle we use a rack of plates to boil. Here they use cloth tied to the mouth of mudpots to boil them.Also the proportion of rice and urad dal is also different.
